bread:
optional : I used one of those bake at home brown rolls. These are perfect if you don’t have time to actually make bread from scratch but you still want that baked bread freshness. They usually take about 12 minutes in the over (check your packaging for how to cook to be sure). I only started buying these recently and love the smell of baked bread in the house. They stay super crispy for a packed lunch for work / college / school.
This is such an easy and quick recipe to make the evening before work / school.
Equipment:
chopping board, knife, air tight container, paper wrapping for your sandwich.
METHOD
Chop it –
Slice up your tomato, cucumber, pickle, and peppers. All in slices or long strips.
The delicious HOTFRUIT homemade hey pesto recipe is in the link below. This is so easy to make, it takes about 5 minutes to wiz up in the blender. With this recipe, you can make enough for about 4 sandwiches.
Bake it-
Heres the part that makes this sandwich so lip-smackingly good. Most good grocery stores will have ‘bake-at-home’ loaves and rolls. I highly recommend this. Not only does it make your whole home smell like freshly baked bread but this way you can make your sandwich in advance of work / school and it will stay crispy and won’t go soggy (I hate when that happens).
Assemble it –
Once your bread is ready, let it cool a little before cutting.
Slather on a generous amount of your freshly made hey pesto, layer up your tomatoes, cucumber, pickle, peppers, and sprinkle on the sunflower and pumpkin seeds. This ‘sammich’ has a high crunch faster and will leave you feeling full and satisfied.
TASTY TIPS

Like nuts, pumpkin seeds are a great source of protein and unsaturated fats, including omega-3.
