‘BEEF’
TACO

INGREDIENTS
1 + 1/2 Cup of TVP (Textured Flavoured Protein)
4 tsp paprika / smoked paprika
1 tbsp of soy sauce
3 large fresh tomatoes
1 bunch of cilantro / coriander
2 limes
6 tortilla / taco wraps
1 Cup of canned or fresh sweet corn
1 tsp chipotle chili paste
1 stock cube
160g guacamole
METHOD
Pep it –
Add 200ml of boiling water, in a jug or bowl, to your stock cube. Stir until the stock cube is combined.
In a bowl add the measured TVP and 2 tsp of paprika / smoked paprika. Mix together with a spoon. Then add the stock liquid to the TVP and stir well until combined. Cover with plastic and leave to soak for 10-15 minutes. This will rehydrate the TVP and add a lot of flavor.
Chop cilantro, dice the tomatoes, and slice the limes into wedges. You’re ready to cook!
Cook it –
On medium-high heat add 1 tsp of oil to a pan. Fry the chipotle chili paste for about 3 minutes. Then add in the TVP. Fry this for about 5 minutes. Add in 1 tablespoon of soy sauce extra flavor. Fry as you would ground beef until the ‘meat’ has a little crisp. When it’s ready, remove from the heat and set aside.
On medium-high heat add in the corn and 2 teaspoons of paprika/smoked paprika. Fry until the corn is a little charred, about 4 minutes.
Serve it –
Optional: Heat the taco / tortilla wraps on a dry pan for one minute.
To make one taco, spread on the guacamole, then the ‘beef’ and corn. Top off with fresh diced tomatoes and cilantro. A squeeze of lime to finish and enjoy xx
This recipe is so quick and easy as a lunch meal or if you’re having a few friends over it looks very impressive on a serving platter.
