vegan jerk tofu burger recipe

INGREDIENTS

Serves 2

400g medium firm tofu

2 medium sweet potatoes

3 tsp jerk seasoning

your choice of lettuce (we used lambs lettuce)

3 jarred pickles 

2 tbsp vegan mayo

tinned or fresh pineapple 

2 medium-size burger buns (we used sourdough)

METHOD

Pep it – 

Tofu: Slice the tofu from the side, into two even, long pieces. Using a small glass or cookie cutter, cut out two round burger shapes. Sprinkle on the jerk seasoning, not forgetting to roll the sides in the seasoning. Set these aside in the freezer to firm up. Freezing the tofu dries it out and firms it, even when defrosted. If you have extra-firm tofu you could skip this step. 

Slice the pickle, wash, and cut your lettuce. Measure out your spices. Pop the tin of pineapple open, preheat your oven and you’re ready to get cooking.

Cook it – 

Dry dry your pineapple slices on high heat until they get a lovely charred flavor. This should take 2/3 minutes each side. Remove them and leave to one side.

Wash and chop your sweet potatoes into chunky fries. These take about 20-25 minutes to cook in the oven, so pop them in as soon as your oven is to temperature, 180 fan / 400 F / gas mark 6.

On a medium to high heat fry off your jerk tofu burgers, about 5 minutes each side until the seasoning turns a little darker and they smell amazing!

I always like to toast any buns I am using as I like the crunch. 

Serve it – 

Now its time to build your burger. Spread some vegan mayo over the bun top and bottom. Add your lettuce, pineapple, pickle and tofu burger. Remove your sweet potatoes from the oven, serve and enjoy!

 

The sweet potato pares really well with the jerk seasoning on the burger!

Knife, cutting board, spoons, serving plate, oven.

TASTY TIPS

This is a great hearty meal. The warming spices of the jerk seasoning are great for any time of the year. If your brave add a little hot sauce over your sweet potatoes fries. Baby potatoes with lemon and herbs also go really well with this burger. If you looking for a side for extra protein spicy beans are the way to go.
