
Pesto Pasta
It only takes a few minutes to make your own homemade pasta and vegan.
I lobe this as a Monday night meal because its so quick and easy.

Cooking time: 10-15 minutes
Servings: 2
Nutritional note: It’s bloody delicious.
Ingredients
PESTO PASTA
1 cup walnuts
2 cups fresh basil
3 tbsp any cold-pressed oil
2 clove of garlic
3 tbsp nutritional yeast
2 tbsp lemon juice
pinch of salt to season
2 servings of linguine
1 cup of broccoli
1/2 cup of green beans / fine beans

Prep it –
The only real work in this recipe is peeling and chopping the garlic. I like to chop it before it goes into the blender as it ensures that no big garlic pieces are left to chance. Once this is done it’s time to combine all of the ingredients.
Blend it –
With your new best friend, the blender, you will have this pesto whipped up in a snap. Simply add all of the ingredients into the blender and wiz it up. How blended you like it is up to you. If you like it a little richer then just add a little more oil. I like the keep this to a minimum, just enough to speak on toast or bread.
Get your pasta on a rolling boil. This will take about 12-15 minutes to cook through.
On medium heat fry off your green beans for 4-5 minutes, then add the broccoli.
When your ready add in 1/4 cup of your homemade green pesto (of course you can use shop-bought).
Mix this in well. Add in 3-4 ladles of the water from the pasta to make a sauce in the pan. Fry for 2 minutes.
When your pasta is ready add this into the pan and combine well until your pasta is covered in the delicious pesto sauce. And you’re ready to plate!
