Vegan breakfast bacon

Crispy, chewy, and smokey.

Using rice paper this is one of the fastest and cheapest ways to make your own breakfast beacon on the spot in 5 minutes while your scamble tofu is frying.

Prep time: 1 mins

Cooking time: 5 mins

Servings: 2

Ingredients

BASE

1 tbsp soy
1 tbsp liquid smoke
1 tbsp maple syrup
1 tbsp nutritional yeast
1 tsp smoked paprika
+
rice paper sheets

Optional swap-outs

If you don’t have liquid smoke you can use extra smoked paprika or add a little bbq sauce to give it that smokey flavor.

METHOD

1. Make the seasoning mixture – combine well, mix the ingredients in a bowl.

2. Cut the rice paper sheets into strips.

3. Dunk them into water (2 pieces = one strip of ‘bacon’)

4. Then dunk into the seasoning mixture.

5. Place on a lined baking tray and grill on medium heat for 3-5 minutes, turning halfway.

6. Let the sheets dry and crisp up on a cool rack for about 2 mins.
